Meet Chef Oscar
The hands behind every plate — Naples-born, family-trained, Dublin-loved.

"I cook the food my mother and grandmother taught me. That's it. That's the whole secret."
Born in Naples, Oscar grew up watching the women of his family cook — slow ragù on Sundays, fresh pasta hung on chair backs to dry, pizza dough proved overnight in the kitchen window.
After years cooking across Italy, he brought those same recipes to Dublin and opened La Cosa Nostra on Thomas Street: a small family restaurant where the food is honest, the welcome warm, and every dish made to order.
You'll usually find him in the open kitchen, sleeves rolled, shouting good-naturedly about the dough — and stopping by your table to make sure the risotto was right.
Dishes Oscar is proudest of.

Risotto ai Frutti di Mare
Carnaroli rice, day-boat shellfish, white wine, a whisper of chilli — Oscar's mother's recipe.

Costine al Forno
Pork ribs slow-roasted with rosemary, thyme and confit carrots. Sunday in Naples on a plate.
